Always on the go!!

I'm always on the go these days and I have gotten better at preparing my meals and creating a food journal for the week so I can just grab and go! Even though I have access to a fridge and microwave at work where I spend a better portion of my life I stick with eating the same foods. What makes it even more challenging is that I've had diabetes for 16 years now and the only way to keep my blood sugar under control is a low carb diet being sure to monitor my calories along with the fat content. I'm not obese but I would love to get down to what I weighed in high school and finally lose that freshman 15.

Does anyone have some great recipes to spice up my dietary habits and assist me with achieving losing those extra few pounds?

Hey there,

For lunch I really like to make kale salad with avocado... It's easily tupperware-able and doesn't need heating. I usually finely chop a few leaves of Kale (~1-2 cups) and add a sliced up avocado, salt, and a spoon or two of olive oil. If you make this in the morning, by lunchtime the kale is softened and sweetened a little bit by hanging out with the oil over the course of the morning.  Adding some seeds to this is also yummy!

That sounds great I will have to try it next week. One item I found tasty was homemade sweet potato chips. It takes a little while to prepare but you use one fresh sweet potato, cut in very thin slices then place on a baking tray with nonstick spray and a little sea salt. Place in the over at 200 degrees for about 2 hours or until crispy. I made these over the weekend and put them in ziplock bags. What a tasty healthy snack and the natural sweetness of the sweet potato helped resist the temptation of everyone bringing goodies into the office this week. Have a great Thanksgiving!!!

Thanks for sharing this recipe. I am diabetic and I had undergone an emergency dental treatment in Toronto yesterday. So I am looking for a recipe that wouldn't disturb my teeth and also which is recommended for diabetic patients. It would be great if someone could share such recipes.
