Delicious Tuna Salad

I don't know about you, but I love tuna. It's just how manytimes can you make it with celery and mayo, right? Well, I've been making it differently and here is how:

1 can of tuna in WATER, well drained

1/2 red onion, finelly chopped

1/4 yellow pepper, finelly chopped

2-3 Tbsp of corn

scallions, pepper, paprika to taste

Mix all the ingredients.

In a bowl mix your favorite greens, add some tomatoes, cucumbers, peppers, avocado if you like, freshbasil leaves and fresh mint sprinkle with balsamic vinegar and olive oil. Place the greens on a plate, top with tuna mixture and voila. If you like croutons or a roll with your salad, skip them and instead cut up pita bread into thin strips (use Joseph's Bakery pita for diabetics), toss onto a heated pan and occasionally stirring wait until they're crisp to get a healthy salad topping. All you're left with is enjoying your meal :)

MMMMMM! TY Isabel! You could probably make a big batch and use it for several days. I bet it would be great with chicken too! Great recipe!

I tried this recipe with chicken( im allergic to seafood). It was pretty good. I love the fact that it wasnt that many carbs.

Ahh! I'm not a big tuna fan...so, maybe I'll try it with chicken too!
