I want less meat

I noticed after eating meat I'm tired and sleepy, so I decided to cut down on any meat and maybe have it once a week. The thing is, can't have fish every day either, because that can get expensive. I love vegetables and have them all kinds of ways (grilled stuffed in a pita pocket for diabetics from Joseph's Bakery, raw in a salad, steamed with some seafood), but am thinking I need more options. I'm looking for interesting recipes that don't include meat and are not too fatty, and at the same time are wallet friendly and can be made to feed just one person and not a family of 5 :)

Hi Isabel,
I have a cookbook called "The Carb Conscious Vegetarian" that has wonderful recipes in it that are easy to make and can work well for one, especially for one with diabetes!
