Mock Crepe Recipe:



ingredients:



1 Smart and Delicious* large whole wheat wrap

2 tbsp low fat ricotta cheese

1 tbsp sugar-free jam

1 tsp flax seed

2 packets no-calorie sweetener (equal,splenda, etc.)

3 sliced strawberries

handful blueberries

3 walnut halves

cooking spray



Mix together ricotta, jam, one packet sweetener, flaxseed.

Spread ricotta mixture in middle of wrap, break walnut halves into pieces and sprinkle evenly over mixture. Top with sliced strawberries and blueberries and remaining packet sweetener. Fold one side (long-ways), then fold in both ends, and fold in remaining side to cover.

Spray pan with cooking spray, grill each side until golden (about 3-5 min/per side)

That sounds good. I'll have to try it. Since you used the topic "Favorite Breakfast" I might as well add mine.

1 1/2 cups quartered strawberries
1 container light strawberry yogurt
1 tbs. grapenuts

Mix together yogurt and strawberries. Sprinkle Grapenuts on top.
Yum yum!

Another good breakfast:

Oatmeal Pancakes:

1 cup lowfat cottage cheese
1/2 cup old fashioned oats
1/2 cup egg substitute
1 1/2 tsp vanilla
1/2 tsp cinnamon
dash nutmeg
blueberries, fresh or frozen (optional)

Blend ingredients together in a blender until smooth. (Not blueberries)
Spray nonstick pan with cooking spray.
Drop 1/4 cup mixture in pan and top with blueberries.
Cook until bubbles start forming on top. Flip, cook until done through.

Makes about 7 pancakes......enjoy!

(About 55 calories per pancake and 6 carbs!)

On the same note-anyone ever tried apple sauce and cottage cheese? YUM! My favorite is the "chunky" (homestyle) apple sauce and fat free cottage cheese. Great snack too!

That sounds good too! My favorite fruit mixed with cottage cheese are peaches.

I still am crazy about adding peanut butter to oatmeal. Any excuse to add peanut butter to anything sounds good to me :)

And not that this has anything to do with breakfast...but I've been roasting tomatoes in the oven w/ a little bit of garlic lately....super easy and very good! Last night my boyfriend and I put a little bit of goat cheese on top and broiled them at the end. Turned out really good! Perfect for the fall :)

I can't say it is my favorite breakfast, but I have an egg and buttered toast each morning. I make the bread myself.
