As most of you know I've gone back to school and my class happens to fall right at lunch time. I need some healthy, low fat, diabetic and budget friendly, packable lunches that don't require any heating.... I know, lots of requirements. I drop my twins at the campus preschool at 10 am and I start class at 1115. I like to eat and read for a few minutes either in the car or on the lawn outside of my building. I can only handle so many PB sandwiches. The fat in PB alone keeps me from wanting to use it more than once a week. Any suggestions?
