Need some lunch ideas

As most of you know I've gone back to school and my class happens to fall right at lunch time. I need some healthy, low fat, diabetic and budget friendly, packable lunches that don't require any heating.... I know, lots of requirements. I drop my twins at the campus preschool at 10 am and I start class at 1115. I like to eat and read for a few minutes either in the car or on the lawn outside of my building. I can only handle so many PB sandwiches. The fat in PB alone keeps me from wanting to use it more than once a week. Any suggestions?

I used to have to take lunch to church...since it was right in the middle of the day! One of my favorites was tuna on wheat bread with carrot sticks and a small apple. I make my tuna one of two ways:
#1 - mix with small amount mayo or salad dressing, a chopped tomato, and shredded lettuce
#2 - mix swith mayo or salad dressing, add onion powder, salt and pepper to taste.

You could use method #2 with diced chicken, ham, boiled egg, or turkey and it would be equally yummy.

If you want something cheap but good, try getting the rice that you microwave. So you microwave it at night before you go to bed and place it in a bowl. Then cook a small stake or chicken (or if you have any leftover) place on top of rice, season. Now I eat this cold or heated and it is great. I like spicy things so I put salt, pepper and cayenne pepper. You can use any spice that you like. :laugh:
