I created a new recipe today that is very low carb, fairly low fat, and, if I must say so myself, pretty good. I call it

Donna's Mexican Lasagna

(measurement is approximate)

5-6 inch corn tortillas (15 gr. of carbs each)

1 lb. very lean ground beef

2 cups picante sauce

1/2 cup chicken broth

1 cup grated cheese

1/2 cup chopped onion


garlic powder

Heat oven to 350 degrees.

I used a casserole dish about 10X10.

Cut the tortillas into smaller pieces. (I cut them into 1/8's like a pie then cut those across.) Brown the ground beef with the onion, garlic powder, and salt. (You might want to add more seasoning.) Spray the casserole with Pam and place a layer of th tortillas on the bottom. Cover with half of the ground beef,and half the picante sauce. Pour 1/4 cup of chicken broth over that and sprinkle with half of the cheese. Repeat for a second layer. Cook for about 40 minutes or until the cheese is melted and bubbley. I cut it into 4 equal parts and served with a spoon of low fat sour cream on top and salad. I estimate it to be about one carb. serving each. Low fat cheese will lower the fat included even more.
